Spinach Salad with Strawberries, Avocado, Blue Cheese and a Poppyseed Dressing

It’s summer, which means BBQ season so it’s vital to have a winning salad recipe in your repertoire. This Spinach Salad with Strawberries, Avocado, Blue Cheese and a Poppyseed Dressing is one of my summer-go-to salads to bring to a party or to serve as a simple but tasty side salad with some meat. You can throw it together in minutes and the mix of the sweet strawberries with the blue cheese and the refreshing dressing is a match made in heaven. Quick tip; if you’re taking this to a BBQ or party – just keep the dressing in a cup or container and pour it over the salad just before serving so the spinach doesn’t go all soggy!

Creamy avocado tahini dip with homemade pita chips

Having people over and want to serve a nice but easy homemade snack? I recently made this delicious avocado tahini dip and thought I’d quickly share the recipe. It’s smooth and creamy and a bit like hummus but the base is avocado instead of chickpeas. It’s delicious as a snack or starter that’s ready in 5 minutes! Christmas Baking Inspiration

Only 3 more sleeps until Christmas! Life has been pretty hectic the last few weeks, so I have to say I am very much looking forward to a couple of days of chilled family time at home over the holidays. I am not going away for long but spending time with family and eatings lots of delicious food is going to be wonderful. I’ll probably be spending most of my time in the kitchen with my dad cooking up a storm and baking lots of festive treats – and I love it.

In my family we don’t really do presents at Christmas (because we celebrate St Nicholas on the 5th of December) so instead I always bake something, to be able to give them delicious edible presents. I always do my Christmas baking research on Pinterest and I found some great recipes..but I am not going to share those on blog just yet. So instead I thought I’d share with you some of the things I’ve made in the last few years to give you  all some Christmas baking inspiration!

Healthy cooking with Mindful Chef 

Now, if you are a regular follower of my blog, then it’s no surprise that I am into a little thing called; FOOD! And because I love food so much I really try to enjoy it and live by the 80/20 diet for most of the time. This way, I don’t restrict myself, get to enjoy the foods I love, while still maintaining a healthy routine and ‘diet’. I already cook pretty healthy for myself most of the time but do admit that my weekly recipes are getting a little boring. I mean by the time I finish work, have done my workout (I am obsessed with Classpass these days) and I bike home it’s usually 8-8.30pm so by then my brain can’t focus too much on cooking up anything special. It’s often stir frys, protein and veg or salads. Anything quick and easy really but I do try and cook things from scratch and not using any processed / ready made meals as I think clean eating is definitely so much better for your body.

Now, I recently came across The Mindful Chef on instagram and was instantly hooked on the way their food looked! They basically are a recipe box service where their chefs create delicious healthy recipes using seasonal ingredients. They also don’t contain pasta, white rice or bread. They then source all the ingredients you need for these recipes and pre-measure them into exact quantities needed and deliver it to you for free at your home or office – goodby (dangerous) supermarket visits on a hungry stomach after work!

All sounds pretty good right? So I decided to trial healthy cooking with Mindful Chef for a week, let’s see how I got on :)
