About 6 months ago I made the decision to become healthier, fitter and lose some weight. I moved from Auckland to Wellington in June last year and the change of city, lifestyle & ending a 7-year relationship made me gain about 8-10kg. It wasn’t that obvious to anyone else, but it definitely was to me (e.g. not fitting all my favourite clothes!) so I decided to do something about it.
I joined a gym and worked out at least 4-5 times per week. I found this website called daily burn where I would record all the food I ate and the exercise I did. I stuck to a calorie limit of approximately max 1500 calories per day and pretty much cut out most naughty food. This definitely worked because since then I have lost approximately 10kg’s and have never felt better. I am now back to my original normal weight and perhaps even a little fitter and more toned (yay!). I’d say that at this point I am at my ideal/healthy weight but am still very focussed on maintaining that weight and not gaining it all back. To do so I stick to a certain lifestyle by eating healthy and continuing with regular exercise.
In the last 6 months of “diet” time I have learned so much about food by following healthy food blogs which provided me with healthy recipes & ideas. One of the discoveries I made that I wanted to share with you is healthy ice cream. Yes it exists!! It is called “Banana Soft Serve”. It is SO easy to make & SUPER yummy. Some people I shared this recipe with couldn’t believe that it wasn’t actual ice-cream.
Banana Soft Serve Recipe
- Peel your banana & break your it into chunks/slices (1 medium sized banana per serve/person)
Freeze your banana chunks in ziplock bags or tupperware.
- Once frozen, take bananas and put them in your food processor.
- Turn the processor on until the bananas become light, soft and smooth. This should only take around 3-5 minutes.
- You can turn it off once in a while to scrape the bananas down.
- By this time, your banana soft serve is ready to eat. Just scoop them into a bowl and relish the healthy goodness of this delicious guilt free dessert.
Possible Add ons/Variations:
Add 1 tsp unsweetened cocoa powder to make Chocolate Soft Serve
Add in 1tbsp of real Peanut/Almond Butter
Add frozen berries or other frozen fruit of your choice
Add some vanilla essence
Some people add some milk or water to smooth it down
Sprinkle with nuts or coconut or anything you like really
