Christmas Baking Inspiration

Only 3 more sleeps until Christmas! Life has been pretty hectic the last few weeks, so I have to say I am very much looking forward to a couple of days of chilled family time at home over the holidays. I am not going away for long but spending time with family and eatings lots of delicious food is going to be wonderful. I’ll probably be spending most of my time in the kitchen with my dad cooking up a storm and baking lots of festive treats – and I love it.

In my family we don’t really do presents at Christmas (because we celebrate St Nicholas on the 5th of December) so instead I always bake something, to be able to give them delicious edible presents. I always do my Christmas baking research on Pinterest and I found some great recipes..but I am not going to share those on blog just yet. So instead I thought I’d share with you some of the things I’ve made in the last few years to give you  all some Christmas baking inspiration!

Ottolenghi’s Apple and Olive Oil Cake with Maple Icing

This Apple and Olive Oil Cake is probably one of the first cakes I ever made from Ottolenghi’s ‘The Cookbook’. It’s a total winner of a recipe. I’ve made it several times now and people always love this moist Apple and Olive Oil Cake and don’t even get me started on that out-of-this-world-delicious maple icing! Who would have thought that maple syrup would go so well with cream cheese.

White Chocolate and Raspberry Cookies

I made these (incredible) White Chocolate and Raspberry Cookies over Easter and thought I better share the recipe with you all. I stole kindly got the recipe myself from our lovely chalet hosts while skiing in France in March. They were brilliant bakers let me tell you that (you can find another recipe for a GF Carrot Cake by them here)! These White Chocolate and Raspberry Cookies are super easy to make and they are so moreish. Chewy but crunchy at the same time and the mix of the sweet white chocolate and tart raspberries is amazing. I’d never used sweetened condensed milk before in a cookie dough but it works wonders.

Gluten Free Carrot Cake with Cinnamon Icing

When I was on skiing holiday in Val D’Isere, we stayed in a fabulous chalet organised via VIP Ski. They provide you with a fully organised and catered holiday which means all you have to focus on is having fun and enjoying your time away with friends. One of the parts that made our holiday so enjoyable was our amazing Chalet hosts Sophie & Andy. They looked after us brilliantly and daily fed us the most amazing food. For example every afternoon after coming back from skiing (or apres-skiing…) we’d have afternoon tea laid out for us to tuck into. And tuck into it we did! One of my favourite treats they made us was a Gluten Free Carrot Cake with Cinnamon Icing. Kind as they were, they allowed me to steal the recipe to share with you all so here it is..
