Healthy Homemade Peanut Butter Granola

When it comes to breakfast and the weather getting warmer again in London, I just can’t help craving Granola all the time! And I like my granola fresh and homemade because the store bought ones are full of added sugars and preservatives that are really unnecessary. My usual go-to granola recipe is this Honey Nut Granola which is deliciously crunchy, nutty and healthy – but I was in the mood for something new recently. Now, it’s no secret that I am totally obsessed with anything containing peanut butter so I thought why not mix my cravings for granola and peanut butter together to create a healthy homemade Peanut Butter Granola!

Healthy Homemade Peanut Butter Granola

INGREDIENTS:

2 cups of rolled oats
4 tbsp of peanut butter
3 tbsp of honey
1 tbsp of coconut oil
1 tsp ground cinnamon
1 tsp vanilla extract

METHOD:

Preheat oven to 170C degrees. Place your oats into a mixing bowl. In a microwave safe bowl combine your peanut butter, honey and coconut oil and heat mixture until it’s running and smooth. About 30 seconds should do the job. Then add your cinnamon and vanilla essence. Pour the peanut butter mixture over the oats and mix all together with a spatula until everything is evenly coated.

Evenly spread the granola mixture onto a (baking paper lined) baking sheet and bake in the preheated oven for about 15-20 minutes, or until golden brown. Stir once halfway through baking. Allow to cool completely, as it won’t be crunchy until it cools. Stir in an airtight container or a pretty major jar!

Oh and mixing it up was such a clever and incredibly scrumptious idea, if I say so myself. This healthy homemade Peanut Butter Granola is really easy to make and makes a perfect breakfast mixed with creamy greek yoghurt, fresh fruit + oeh maybe a spoonful of peanut butter? Yummmm…….(have left to raid my peanut butter jar)…..ENJOY!
