Did you know that tomorrow is Shrove Tuesday, or also better known as Pancake Day? Pancake Day is the day before Ash Wednesday and the start of Lent. It was traditional to eat pancakes on this day because they contain fat, milk, butter and eggs which were forbidden during Lent. Now, Pancake Day or not – I just love a good pancake so thought I’d treat you to a great little recipe for this today!
But it gets better….because what if I told you that this pancake recipe doesn’t contain much fat or naughty things at all? These pancakes only include three simple ingredients and no flour or oil/butter whatsoever! There are a lot of these banana & egg style pancake recipes floating around on the internet (I was inspired by this recipe from The Skinny Confidential) and I was sceptical at first too, but wow they are super tasty and filling! So what are you waiting for, check out my three ingredient healthy pancakes recipe below.
Three Ingredient Healthy Pancakes
1/8 tsp Baking Powder
(pinch of cinnamon – optional)
Peel banana (ensure it’s ripe but no need to be overripe but just no green ones!) and mash into a bowl with a fork. You can keep it a little lumpy but just ensure it becomes a nice mushy/creamy texture. Add the two eggs, the baking powder and mix all together. You can omit the baking powder if you want but I feel it makes them that little bit fluffier. Add your pinch of cinnamon or dash of vanilla essence (optional). I personally love cinnamon so add it to recipes whenever I can. Heat a frypan on medium heat with some coconut oil or spray with your cooking spray of preference (I usually use extra virgin olive oil). Spoon 2 tablespoons of the batter into the frypan per pancake and heat on each side for about 2 minutes. I just lifted up the edges a little to see when they were done. Place on a plate and repeat with the rest of the batter. This serving makes about 8 little pancakes which made a lovely filling stack for one person!
You can top these delicious little HEALTHY pancakes with whatever you fancy but I went for a raspberry & maple syrup combo. I mashed some fresh raspberries and mixed them with a splash of maple syrup to create a berry coulis and then topped it off with more fresh berries and a drizzle of maple syrup! I think next time I might try them topped with some slices of banana, a dollop of peanut butter and some crushed nuts. Yummmmmm. What are your favourite pancake toppings?
