Do you ever have a BBQ or to go to and then remembered you had promised to bring a salad and want to whip up something quick that’s a bit more exciting than your usual green garden salad? Well then this is your lucky day! This Mango Avocado Macadamia Salad is one of my go-to summer salads. It’s not only super delicious and bound to impress everyone, it’s also incredibly easy to make!
This recipe makes one giant bowl to feed a crowd, or a hungry family/group of friends. You can of course also make it smaller by adjusting the ingredients accordingly.
Mango Avocado Macadamia Salad
2 large mangos, cubed
2 avocados, diced
3/4 cup macadamia nuts, roasted and salted (I just buy them like that from the supermarket in a packet, easy!)
Large bag of rocket/arugula salad leaves
1/4 cup lemon juice
2 tbsp apple cider vinegar
1/4 cup olive oil
1 tbsp Dijon mustard
1 tsp honey
Dash garlic powder (optional)
Slice and dice both the avocados and mangos into large cubes. Mangos can be slippery little buggers to prepare but it’s one of my favourite fruits so over the years I’ve mastered the skill. This is my handy tip on how I chop mine (link) in no time.
Now very roughly chop the macadamia nuts. It’s fine to leave most of them as halves. Place the diced avocado, mango and macadamia nuts in a large bowl. Then combine all the ingredients for the dressing and keep this (and the rocket) aside until you are ready to serve the salad. If you put it all together too quickly it will just become quite soggy!
When you are ready to serve, toss it all together and drizzle over the dressing. Top with some fresh black pepper and dig in!
