It’s not really a secret that I am bananas about Banana Bread! My friends know that when we are out for brunch and I spot it on the menu, I will be the first one to suggest that we share a slice after our brunch for ‘dessert’.

One of my friends in London, fellow banana bread addict and Aussie baker Sharon Luff is the mastermind behind the company The Big Banana Bread Co, which she started from her kitchen in Notting Hill. When Sharon move to the UK, she searched high and low for her daily bread, and when she couldn’t find it, she made it herself. She saw an opportunity to change the way Brits eat breakfast by creating her own ‘Aussie-style’ banana bread, something she believed would be the ‘next big thing’ in the U.K.

I think the best way to enjoy Banana Bread is freshly toasted with a bit of butter or I sincerely recommend spreading your toasted slice with a generous dollop of ricotta, a drizzle of honey and a sprinkle of cinnamon.
